Most people know that chocolate is made from the cacao bean, but that's probably where it ends. The truth is chocolate, as we know it today, has quite an interesting history.
It is believed that chocolate has been around for approximately 2000 years. In pre-modern Latin America, Aztecs used cacao beans as currency, for bartering. Chocolate maintained its use as currency even through the Revolutionary War when soldiers were given chocolate in lieu of wages. Not a bad payday if you ask me.
Beyond its economic power, chocolate was used in many sacred rituals of the Mayans and Aztecs. They used chocolate in marriage, birth and death ceremonies because they believed it was imbued with divine and even magical powers, not because it tasted good.

The “chocolate” made directly from the cacao bean was bitter. Sweetened chocolate didn’t exist until the Europeans discovered it in the early 16th century and subsequently mixed it with honey and/or cane sugar. After it was brought back to the New World, chocolate remained limited to the upper classes until the Industrial Revolution in the late 1700’s when the invention of the steam engine allowed for mass production.
Modern chocolate as we know it today is credited to Joseph Fry.
In 1847, Fry discovered that he could make a moldable chocolate paste and that became the first chocolate bar. Fry’s discovery, paved the way for the pioneers of chocolate such as Cadbury, Nestle, and Hershey.
