Tuesday: Cheesy Pork Chops with Spicy Apples

"A man's grill can't be too big," my dad explained to Dave right before we got married. "It has to be big enough for power, but not so big people think you're compensating."
It was the only piece of advice he gave us. Whether you have a big grill, small grill, no grill or your only grill is the bling in your smile, you can make this delicious pork chop recipe. If you don’t have a grill just make the pork chops in your frying pan or broiler. Pork dries out fast, so don't set the temperature too high. If you can throw meat onto a hot surface, you can make this recipe. Usually we leave out the red pepper flakes and only use and switch the balsamic vinegar to apple cider vinegar. But the cheese must be cheddar and it must be sharp. I like to serve these pork chops with instant rice and steamed veggies.
1 tablespoon butter
1/2 onion, sliced
1 pinch red pepper flakes
1 apple, cored and sliced
1 teaspoons white sugar
1 tablespoons balsamic vinegar
2 pork chops
salt and pepper to taste
2 slices extra sharp Cheddar cheese
1. Prepare a grill for high heat.
2. While the grill heats, melt the butter in a skillet over medium heat. Add the onion, and cook until soft. Season with red pepper flakes then add the sliced apple. Stir in the sugar and balsamic vinegar, and simmer for 5 minutes, or until apples are soft and golden.
3. Season the pork chops with salt and pepper. Grill for 3 to 5 minutes per side, depending on thickness. Spoon the onions and apples on top of the chops, and top with a slice of Cheddar cheese. Cover the grill, and cook for about 3 minutes until cheese is melted and bubbling.
