We all need a little more time on our hands and a little more chocolate lava love.

Autumn is here and if you're anything like me, your food cravings have gone from bikini-body smoothies to mmm-mmm, good comfort foods. These days, I want butternut cream pasta, pumpkin stew, warm apple cobbler and crockpot ANYTHING.

And, I say "crockpot anything" because basically: you can cook anything in your crockpot. That's right, that slow cooker sitting in your cupboards isn't just good for making Grandma's Sunday roast. It's also perfect for Asian short ribs. And lasagna. And OMG: Cake. Yes, crockpots make cake. If you haven't already discovered this, it's high time you found out. CROCKPOTS MAKE CAKE.

Easy enough for the tired, working mama to make, quick enough for the busy, single girl to make. Crockpot cake is meant for everyone.

Slow Cooker Lava Cake

This delicious chocolate cake is perfect topped with a scoop of ice cream. Enjoy!

Makes 8 servings

  • 1 Package chocolate cake mix
  • 3 eggs
  • 1 cup butter
  • 2 cups water
  • 1 package chocolate pudding mix
  • 1 (12 oz) bag semi-sweet chocolate chips

In a large bowl, whisk together the cake mix, eggs, butter, water, and pudding mix. Fold in the chocolate chips. 

Spray a 6-8 quart slow cooker with nonstick baking spray. Spoon batter into the crockpot. Cover and cook on low for 3-4 hours, and high 1-2 hours. The baking times between different ovens will vary, so start checking your cake around the 1 1/2 hour mark. You'll know it's done when it starts to set up in the center. Serve heaping scoops of hot cake topped with ice cream.
