The best relationship I had, the guy ended each email differently, and it got more intimate as things went. When we first started talking, it was "Later" or something similarly casual. When we started getting close it was always whatever emotion my email gave him: "Happily", "Sadly", "Laughingly", or sometimes "Missing You". Then when we got to the ding-dong and hoo-ha stage it was usually some variation of "Thinking of You" (various degrees of dirty).
There was never just a set way that he ended the email. When I commented on it, he said it was because whenever he got an email that ended with a set ending, he assumed it was an email signature and it always felt insulting to him.
I like to say "best" in all circumstances, except with the Dave. But I usually don't sign those.
Does anyone remember in Are You There God? It's Me, Margaret when her friend signed her letters "Love and other indoor sports". I love that! I've always wanted to try it, but I don't have the guts.
